Ensalada de Quinoa

Una ensalada fresca y saludable de quinua como base. Usamos consomé de verduras Mondu como líquido para dar sabor a nuestra quinoa. Nos encanta que esta sea una opción 100% natural. Pruebenla sola, o como acompañante de pollo a la parrilla. Deslicen las imágenes para ver la receta.

Quinoa Salad
Recipe adapted from Taste of Home
Yields 4 servings
Ingredients, for the salad:
2 cups vegetable broth (made from Mondu broth concentrate)
1 cup quinoa, rinsed
1 cup chopped Granny Smith Apple
1 cup chopped cucumber
1/2 cup minced fresh parsley
1 green onion, thinly sliced
1 cup cubed avocado
Ingredients, for the dressing:
1/4 cup olive oil
2 teaspoons grated lemon zest
2 tablespoons lemon juice
2 teaspoons minced fresh ginger
3/4 teaspoon salt
Instructions:
- For the dressing, in a small bowl, whisk all the ingredients together.
- In a small saucepan, bring broth to a boil. Add quinoa. Reduce heat; simmer, covered, for 12-15 minutes or until liquid is absorbed. Remove from heat, and fluff with a fork. Transfer to a large bowl and let it come to room temperature.
- Add apple, cucumber, parsley, and green onion to the quinoa. Drizzle with dressing and toss to coat. Serve or refrigerate and serve cold. Gently stir in avocado before serving.
