Slow Cooker Guinness Pulled Pork

Guinness Pulled Pork. Guinness. I found Guinness here in Guate! I am still excited as you can tell. I went out to lunch with a friend, and because the universe wanted me to find the brewery, turns out that our original lunch place was packed. No car spot left, so we ended up heading to Plaza Futeca. After having a nice quiet lunch (we ate later than usual), we saw a place that sold beer, so as I am constantly looking for my precious Guinness, we stopped and asked… And there it was! The place is a Brewery/Sports Bar called Birra Bier, and you can find, according to its Facebook page, over 50 different beer brands from all over the world. Call me a happy camper!
Then, a few days later I went down with pneumonia, so I had to wait a bit until I gained both my strength back and my quick mind to see what to prepare. But all the time I had to be resting and literally catching back my breath, was put to good use and I searched for recipes. I searched high and low… And finally after reading many recipes, I decided to try this recipe by Ali from Gimme Some Oven. I liked the combination of paprika and chili powder, and loved that it actually has onion. Not onion powder. And I replaced the garlic powder with a garlic clove. Next time I am adding a bit more of both paprika and chili powder, but that’s just a matter of personal taste.
Best thing about this recipe is that since it’s prepared in a slow cooker, it takes 10 minutes tops to prepare (if you use a knife instead of a mandolin to slice the onions), add it all to the slow cooker for a good 10 hours, or 5 if you do it in high, and dinner is ready. I am currently looking for more slow cooker recipes to prepare at home. We’ve found that it’s not only easy to prepare, but the meat itself comes out extremely tender, much more than if prepared in a pressure cooker.
Now, to serve this pulled pork, we suggest either ciabatta-like rolls or corn tortillas. This would make amazing tacos or wraps. Serve it along a good serving of veggies. I have tried it as you see here with rolls, served with a coleslaw salad or a good green salad, to balance out the dish. And let me tell you also, that this has no added fat. Love it. When you are cooking the pork, the alcohol in the beer will smell strongly if you open the lid to take a peek while tis cooking like my dad and I did throughout the day, but if you keep the slow cooker covered as its supposed to, you won’t even feel it. Our favorite way of serving it has been as sliders… And now with the soccer World Cup coming soon, we see that this will be a perfect dish to prepare for those game days!

Guinness Pulled Pork
Recipe by Gimme Some Oven
Yield: 10 Servings (2 small sliders per person)
Ingredients:
4 lb. boneless pork butt or shoulder or loin
1 large white onion
1 clove of garlic
1 tablespoon of paprika
2 tablespoons of salt
1 teaspoon of crushed red pepper
1 teaspoon of crushed black pepper
1 (11.2 oz) bottle of Guinness extra-stout beer
ciabatta rolls like these for serving
Directions:
- In a small bowl, whisk together paprika, salt, crushed red pepper, and black pepper until combined. Rub the mixture all over the surface of the pork until covered.
- Thinly slice the onion, with a mandoline, and peel the garlic.
- Spread out the sliced onions and whole garlic over the bottom of the slow cooker.
- Place the pork on top. If the pork is too long for your slow cooker, you can do what I did and cut it in half so the pork can fit loosely in it. Now you can pour the beer on top.
- Cover and cook on Low for 10-12 hours, or until the pork literally falls apart. Take out the garlic clove with a spoon. It will be very tender.
- Tear the pork apart in the slow cooker with two forks, mixing it with its juices. Taste it for seasoning. If you need to do so, adjust salt and pepper.
- Heat some ciabatta rolls and serve them with pulled pork. You can also add this to tacos or salads.
- Store in an airtight container in the refrigerator for up to four days, or freeze.
