For years, we’ve been sharing recipes that pair beautifully with liqueurs, sparkling wines, and a few different wines. Now, we’re bringing a more casual and approachable twist to our recommendations with our new series: Sips & Bites.

To kick things off, we chose Adobe Merlot Reserva—this is one of Kitty’s go-to everyday wine which she discovered during the 2020 lockdowns 🤭

We love its smooth, easy-drinking character, and it turned out to be a wonderful match for our featured recipe: Caramelized Onion and Cheese Quesadillas.

The Adobe Merlot Reserva, from Emiliana Organic Vineyards, is and organic wine from the region of Valle de Rapel, Chile celebrated for its approachable and versatile profile. Here’s what you can typically expect.

Aroma

Inviting scents of ripe red fruits like cherries and plums, complemented by subtle hints of herbs and spices.

Palate

A medium-bodied wine with soft tannins, offering flavors of juicy berries, a touch of vanilla, and a smooth finish.

Pairing with Caramelized Onion and Cheese Quesadillas

This Merlot’s characteristics make it an excellent companion for the rich flavors of caramelized onion and cheese quesadillas: The wine’s fruity notes harmonize with the natural sweetness of the caramelized onions, creating a balanced taste experience, while the soft tannins and medium body of the Merlot complement the creamy texture of the melted cheese, enhancing the overall mouthfeel without overwhelming it. Any subtle herbal hints in the wine can accentuate the flavors of herbs like thyme or oregano that might be used in the quesadillas.

Caramelized Onion and Cheese Quesadillas

Makes 4 servings

Ingredients:
2 large onions, thinly sliced
2 tbsp butter or olive oil
1 tsp brown sugar (optional, for extra caramelization)
½ tsp salt
¼ tsp black pepper
½ tsp balsamic vinegar (optional, for depth of flavor)
4 large flour tortillas
1 ½ cups shredded cheese (cheddar, Gruyère, or Monterey Jack work well)
½ tsp dried thyme or oregano (optional)
Cooking spray or butter, for the pan

Directions:

  1. Caramelize the Onions: Heat butter or olive oil in a skillet over medium-low heat.Add the sliced onions, salt, and pepper. Cook slowly, stirring occasionally, for 20-25 minutes until golden and soft. If desired, add brown sugar and balsamic vinegar in the last 5 minutes to enhance sweetness and depth. Remove from heat. This step can be made in advance, storing the cooled caramelized onion in the refrigerator.
  2. Assemble the Quesadillas: Place a tortilla on a flat surface. Sprinkle half with shredded cheese, then add a layer of caramelized onions and a pinch of thyme or oregano. Fold the tortilla in half and press gently.
  3. Cook the Quesadillas: Heat a skillet over medium heat and lightly coat with cooking spray or butter. Cook each quesadilla for 2-3 minutes per side until crispy and golden brown, and the cheese is fully melted.
  4. Serve: Cut into wedges and serve warm. Optionally, pair with a drizzle of honey for contrast
