Poached Chicken

Flavorful and tender poached chicken that you can use to have on hand to make wraps, salads, sandwiches or add to soups or pasta.

Poached Chicken

Makes: 4 servings

Ingredients:
1 ½ pounds skinless, boneless chicken breast
3 garlic cloves, smashed with the flat side of a knife
½ white onion, sliced
1 bay leaf
2 lemon peels
1 celery stalk
1 large sprig of fresh cilantro
1 ½ teaspoons fine salt
water

Directions:

  1. Add chicken and all the aromatics and spices to a medium pot. Cover with water by an inch or two.
  2. Place the pot over medium heat and heat until the liquid comes to a low simmer. This will take a few minutes.
  3. When the liquid reaches a low simmer, turn down the heat to low and cook until the chicken is cooked through, 10 to 15 minutes.
  4. Transfer to a cutting board. Slice or shred and it is ready to be served or used in other recipes!
