Red Pesto Chicken
Makes 4 servings
Ingredients:
4 large chicken breasts
1 tablespoon olive oil
1 pint cherry tomatoes
6 oz Philadelphia cream cheese
4 tbs red pesto
¼ cup parmesan cheese
1 ½ cups chicken stock
Seasoning mix:
1 tsp paprika
1 tsp Italian herb mix
1 tsp garlic powder
1 tsp salt
½ tsp pepper
additional salt, to taste
Directions:
- Preheat oven to 375F
- Mix all the seasonings in a small bowl.
- Add the olive oil to the baking dish and add the chicken breasts, turning them to lightly cover with the oil on both sides.
- Sprinkle with the seasoning mix on both sides and follow with the cherry tomatoes.
- To a blender, add the cream cheese, red pesto, parmesan cheese, chicken stock and process until smooth. Pour the sauce into the baking dish, over the chicken.
- Bake for 25-30 minutes. Serve with white rice and broccoli.
