Washington Apple, Walnut, and Blue Cheese Salad
Yields 4 servings
Ingredients, for the salad:
1 Washington Fuji apple, thinly sliced
1 Washington Red Delicious apple, thinly sliced
6 cups mixed greens
½ cup crumbled blue cheese
½ cup candied or toasted walnuts
⅓ cup dried cranberries
¼ cup red onion, thinly sliced (optional)
Ingredients, for the vinaigrette:
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons water
1 tablespoon cider vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
Salt and freshly cracked black pepper, to taste
Directions:
- For the vinaigrette, whisk together olive oil, balsamic vinegar, water, vinegar, Dijon mustard, and honey in a small bowl. Season with salt and pepper to taste. You can also add the ingredients to a mason jar and mix with an immersion blender to emulsify the dressing.
- In a large bowl, layer the mixed greens, apple slices, blue cheese, walnuts, cranberries, and red onion.
- Drizzle the balsamic vinaigrette over the salad just before serving. Toss gently to combine and enjoy!
