Tortellini Soup

This is a creamy soup, which in itself is a meal that will leave you very satisfied. If you feel it is too thick, you can add extra chicken broth or even water. It has vegetables, meat and pasta! You can enjoy it with a green salad and toasted bread. You’re going to love it!

You can use ground pork, ground beef or chicken, Italian sausage or leave the meat out altogether.
The tomato puree should be natural, and without extra flavorings, just plain strained tomatoes.

Tortellini Soup

Makes 4 servings

Ingredients:
1 tbsp unsalted butter
1 tbsp olive oil  
16-oz. cheese tortellini
1 lb. ground pork meat, or Italian sausage
1 medium yellow onion, finely diced
½ cup celery, finely diced
½ cup carrot, finely diced
6-8 cloves garlic, minced, to taste
1-2 tsp Italian Seasoning, to taste
Salt and black pepper, to taste
Red chili flakes, to taste
3 tbsp tomato paste
2 tbsp flour
½ cup dry white wine
700 g. tomato puré (we used Pomi)
4 cups chicken broth
bay leaf
½ cup heavy cream
parmesan cheese, for serving
parsley, as garnish

Directions:

  1. In a large pot, heat olive oil and butter. Add in onion, celery, carrot, pinch of salt, black pepper, Italian seasoning, and red pepper. Sauté for about 5-7 minutes or until tender and beginning to caramelize. Add the ground pork or Italian sausage and cook until no longer pink.
  2. Clear a center in your pot. Add in tomato paste and let it cook off in the pan for about a minute or two before incorporating with the rest. Then cook for another 2 minutes.
  3. Sprinkle in flour and stir. Cook for 1-2 minutes to cook out the raw taste.
  4. Deglaze with white wine, scraping up any brown bits on the bottom of the pan. Let that cook for about 2 minutes. Pour in the tomato pure and chicken broth. Season with salt and pepper. Stir.
  5. Add the bay leaf. Stir and simmer, uncovered, for 20-30 minutes. 
  6. Finally, add the cooked tortellini and cream, stir until creamy. Serve immediately with a sprinkling of parmesan and parsley.
