Grilled Flatbread with Red California Grapes

This Grilled Pita with Red California Grapes is an irresistible blend of sweet, savory, and smoky flavors—perfect for fall gatherings or a cozy night in. We start with a warm pita base and spread on a layer of rich, caramelized onion jam, which pairs beautifully with slices of creamy gouda.

Topped with savory prosciutto, red onion, and halved Red California Grapes, the flavor combination is elevated even further with a sprinkling of fresh thyme. After a few minutes back on the pan, covered, the cheese melts to perfection, making each bite a delicious mix of textures and flavors. It’s a simple yet gourmet treat that highlights the best of California’s grape season!

Grilled Flatbread with Red California Grapes

We recommend you taste the ingredients so you can decide if you lightly season with salt before cooking, the onion jam and prosciutto will provide the salty element, so you will probably only need to season with pepper.

Grilled Flatbread with Red California Grapes

Makes 2 servings

Ingredients:
2 flatbreads, such as pita or naan
4 tablespoons onion jam (2 tablespoons for each pita)
6 oz. Gouda cheese sliced into ¼ inch thick pieces
1 cups red California Grapes halved
8 oz. sliced prosciutto 
thinly sliced red onion, to taste
salt and pepper, to taste
Fresh thyme, to taste

Directions:

  1. Preheat grill or grill pan. Lightly spray or brush the pita bread with water. Place flatbreads on the grill/grill pan and grill for about 1-2 minutes, so that you have grill marks on one side.
  2. Transfer the flatbreads grilled side up on a cutting board.
  3. Spread the onion jam over the flatbreads and arrange the Gouda cheese on top, followed by the grapes, prosciutto and red onion. Season very lightly with salt and pepper, and sprinkle with a thyme. You may not need to add salt, since the onion jam and prosciutto are salty ingredients.
  4. Return the flatbreads on the grill/grill pan, cover and let it cook for about 7-10 minutes, or until the cheese has softened, and the flatbread is toasted. 
  5. Remove from grill, slice, and enjoy immediately.
