Washington Apple and Cucumber Salad
Yields 4 servings
Ingredients:
½ cup Greek yogurt
1 tablespoon lemon juice
1 garlic clove, crushed
1 tablespoon fresh parsley, finely chopped
1 tablespoon mint, finely chopped
1 tablespoon chives, finely chopped
½ teaspoon salt
½ English cucumber
1 Granny Smith Washington apple
6 radishes
Directions:
- In a bowl, add the Greek yogurt, lemon juice, garlic, salt and herbs. Whisk everything together lightly until smooth and creamy. Do a taste test and add more seasoning if needed.
- Slice half an English cucumber lengthwise down the middle. Now thinly slice each half into half-moons. Take the apple and cut it into quarters, discarding the core. Slice the apple pieces widthways to be about the same thickness as the cucumber. Thinly slice the radishes into rounds.
- Add the sliced ingredients to a medium size bowl and pour over the herby yogurt dressing. Stir together to coat everything in the dressing. Serve immediately.
