Tuna Niçoise Salad
Makes 4-6 servings
Ingredients, for the Vinaigrette:
6 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon minced fresh garlic
¼ teaspoon salt
Dash of pepper
1 teaspoon Dijon mustard
½ teaspoon honey
Ingredients, for the Salad:
4 cups mixed salad greens
6 oz. cooked green beans
4 hardboiled eggs
2 cups baby white potatoes, roasted
2 cans tuna, drained
½ cup green olives
½ cup black olives
1 cup cherry tomatoes, halved
½ English cucumber, thinly sliced
½ small red onion, thinly sliced
Instructions:
- Place all the ingredients in a jar, seal with a lid, and shake until completely combined. Set aside.
- Add the lettuce to the serving plate, add the cucumber, tomatoes, green and black olives, roasted potatoes, green beans, onion and top with the tuna. Place the hard-boiled eggs, and drizzle with the vinaigrette.
