Washington Apple Dutch Baby

Yields 4 servings

Ingredients:
¼ cup unsalted butter
1 large Washington Fuji apple, peeled and thinly sliced
½ cup milk
64 g. (½ cup) all-purpose flour
4 large eggs
3 tablespoons sugar
1 teaspoon vanilla
¼ teaspoon salt
Confectioner’s sugar, for serving

Directions:

  1. Preheat oven to 450°F.
  2. Melt butter in a 9-inch oven-safe skillet over moderate heat, then transfer 2 tablespoons to a blender or food processor.
  3. Add apple slices to the skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes – just enough for them to soften.
  4. While the apples are cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to butter in blender and blend until smooth. This will ensure a soft Dutch baby pancake.
  5. Pour batter over apple and transfer skillet to the oven. Bake until pancake is puffed and golden, takes about 15 minutes. Dust with confectioner’s sugar and serve immediately.
