Apple and Greens Salad with Raspberry Chipotle-Lime Dressing

Makes 2 servings

Ingredients, for the dressing:
1 cup fresh raspberries
2 -3 teaspoons Mondu Chipotle Hot Sauce
2 tbsp fresh lime juice (from 1 lime)
2 ½ tbsp olive oil
1 tbsp honey
¼ tsp sea salt
¼ tsp black pepper

Ingredients, for the salad:
2 red apples, quartered and sliced
6 cups mixed salad greens
½ red onion, thinly sliced
2 tablespoons pumpkin seeds
1 cup pecans
½ crumbled ricotta cheese, as garnish

Directions:

  1. For the dressing, in a blender or food processor, combine the raspberries, chipotle sauce, lime juice, olive oil, honey, salt and pepper. Blend until smooth.
  2. Taste and adjust the spice level as needed by adding more chipotle or raspberries to suit your taste.
  3. Store in an airtight container in the refrigerator for up to 4 days.
  4. For the salad, place salad greens in a large bowl and drizzle with half the dressing, then toss. Arrange Scatter over pumpkin seeds, pecans and cheese. Drizzle with the remaining dressing. Serve immediately.
