Honey Lemon Chicken

This recipe looks spectacular and elegant and is easy to make. Simply cover the breast pieces in seasoned flour and brown each piece in a little oil and butter to get delicious, golden pieces. The sauce is made in the same pan using chicken broth, lemon juice, honey and butter.

Our favorite way to accompany this delicious recipe is with mashed potatoes, or crisp roasted potatoes, also with green beans or broccoli.  Try it! We are sure it will become one of your favorites.

Honey Lemon Chicken

Yields 6 to 8 servings

Ingredients, for the chicken:
4 chicken breasts, brought close to room temp
1/3 cup plain flour
1 ½ teaspoon salt
1 ½ teaspoon black pepper
¾ teaspoon garlic powder
2 tablespoons olive oil
2 tablesloons unsalted butter

Ingredients, for the sauce:
⅔ cup chicken stock
3 tablespoons of lemon juice, fresh
3 ½ tablespoons honey
3 tablespoons unsalted butter (keep in the fridge until needed)
1 lemon, for slicing
1 tablespoon finely diced fresh parsley, to serve

Preparation:

  1. Slice the lemon into thin slices, set aside.
  2. Slice chicken breasts lengthwise in half to create 8 even-sized pieces.
  3. In a large shallow dish, combine flour, salt, black pepper and garlic powder. Take one of the chicken breasts and thoroughly coat it in the flour, shake the excess and set aside. Repeat with the remaining breasts.
  4. Heat 1 tbsp butter and oil in a large pan over medium-high heat. Add the chicken and fry both sides for a few minutes, or until golden on the outside and just about cooked through, about 4 min per side. Remove from the pan and set aside. Work in batches until all the pieces are browned and set aside.
  5. To the same pan, stir in the chicken stock, lemon juice and honey. Turn the heat to medium and bring to a gentle simmer for 1-2 minutes, until it starts to thicken. Stir in any resting juices from the chicken and whisk in the cold butter. Once the sauce turns cloudy/glossy, turn the heat to low and check for seasoning.
  6. Add in the chicken and place the lemon slices on top of each breast. Baste in the sauce (the excess flour from the chicken will thicken up the sauce a little more) then serve with fresh parsley and a pinch of black pepper.
