White Bean Spread

An easy and delicious spread with mediterranean flavors that you can serve with pita triangles, baguette sliced or toasted bread slices. It comes together in your food processor, and you can use any type of canned white bean such as cannellini, regular white beans, pinto beans, etc.
To make it look nice we like to drizzle a little olive oil on top and sprinkle with chopped parsley.

White Bean Spread
Yields: 4-6 servings
Ingredients:
1 15-ounce can of white beans, drained and rinsed
2 cloves garlic, peeled
2 tablespoons fresh lime juice
1 teaspoon lime zest
⅓ cup olive oil
½ teaspoon salt
¼ teaspoon freshly ground black pepper
2 teaspoons Italian seasoning, optional
Ingredients:
- Olive oil for drizzling and fresh parsley for sprinkling.
- Place the beans, garlic, lime juice, zest, olive oil, and salt in the bowl of a food processor or blender.
- Puree until very smooth, and then add the freshly ground black pepper and Italian seasoning, if using. Pulse a few times to combine, serve with a drizzle of olive oil and a sprinkling of fresh parsley.
