Street Corn Popcorn

This is a delicious street food inspired snack that you can serve as a snack for your next BBQ. In Guatemala it is common to find elotes locos or elotes asados in markets, outside churches or at local fairs.  Elotes locos are corn on the cob served on a stick covered with mayonnaise, queso seco (a dry, salty crumbly cheese), a little mustard and ketchup. Elote asado is corn on the cob that are grilled to the point of charring and are served with lime, salt and spices.

We really enjoyed this street corn popcorn recipe; it reminds us of the flavors from street food corn and it is so easy to make! We used Naú Lightly Salted Popcorn; they are crunchy pillowy popped corn that is ready to eat.  After mixing it with the lime and spice mayonnaise mix, we suggest you enjoy them immediately, as they will get soggy if left for over an hour.

To give them a more authentic street food presentation, we served our popcorn in brown paper bags.

Street Corn Popcorn

Makes 4 servings

Ingredients:
6 cups of lightly salted Naú Popcorn
¼ cup grated queso seco (or dry crumbly cheese such as cotija or feta)
2 teaspoons chili powder
1 tsp garlic powder
2 tsp fresh cilantro
½ teaspoon cumin
½ tsp salt to taste
3 tablespoons mayonnaise
1 tsp lime zest
1 tablespoon lime juice
pinch of salt

Instructions:

  1. In a small bowl, mix the mayonnaise, lime juice, pinch of salt, cilantro and lime zest. Mix until well combined. In a separate bowl, mix the cheese, garlic powder, cumin, salt and chili powder.
  2. Add the popcorn to a large bowl or pot and pour the mayonnaise over the popcorn until it is evenly covered. Sprinkle the spice mixture over the popped popcorn and mix carefully until evenly coated.
  3. Taste the popcorn and add salt if needed. Remember that queso seco is salty, so you may not need much additional salt. 
  4. Serve in individual brown paper bags to serve in a decorative manner and enjoy immediately.
