Tuna & Chickpea Salad

Tuna fillets, a can of chickpeas, mayonnaise, spices and other flavorings I had in the refrigerator saved lunch today and it was so good!
You won’t find another healthy salad as easy as this!

Tuna & Chickpea Salad
Makes 3 servings
Ingredients:
Tuna fillets, in water (approx. 3 cans or 250 gms)
1 15 oz can of chickpeas
4 tbsp mayonnaise
juice of 2 lemons
½ tsp salt
½ tsp pepper
1-2 tbsp Dijon mustard
2 stalks celery, chopped
2-3 pickles, chopped
1 small seedless cucumber, chopped
¼ cup onion, chopped (more to taste)
1 tbsp fresh dill, chopped (optional)
Directions:
- Mix all the ingredients in a bowl and adjust the amount of lemon juice, salt and pepper to taste. Serve on a bed of lettuce, with crackers, or as a filling for a sandwich.
