Mashed Potatoes (Classic Potato Purée)

This is our go-to mashed potatoes recipe at home, the texture we get from russet potatoes is delicious, and the flavor given by the hot milk with herbs and garlic is fantastic. This is a great recipe to include in your Christmas dinner!

Classic Potato Purée
Makes 4-6 servings
Ingredients:
6 russet potatoes (approximately 3 pounds)
1 cup whole milk
1 sprig of thyme and/or fresh rosemary
2 cloves of garlic
kitchen salt
2 teaspoons of fine salt
¾ stick butter, unsalted
Fresh parsley, chopped
Directions:
- Peel and cut the potatoes into uniform pieces and place them in a large pot. Cover the pieces with cold water and add the kitchen salt. Cook over medium heat and simmer gently, 20 minutes, or until tender.
- Meanwhile, in a small saucepan add the milk, herbs and garlic. Heat the milk, but do not boil it. Set aside to infuse with the flavorings.
- Using a large colander, drain the potatoes and let them dry. Using a masher or stand mixer, mash the potatoes and blend until smooth.
- Add the hot milk and continue mashing or beating to incorporate it well. Add the butter little by little while continuing to mix, and season with the 2 teaspoons of fine salt.
- To serve, sprinkle with fresh chopped parsley.
