Ham & Cheese Croissant Bake
This post is also available in / Esta entrada también está disponible en ESPAÑOL (SPANISH)
This has been a no-fuss favorite to serve for brunch. It’s an easy to prep dish: get fresh croissants from the bakery (you can choose either plain or filled croissants), grab a couple of additional ingredients from the store and do a little prep.
It takes a few minutes to prep and the next morning you just bake and serve. You can mix it up with your favorite ham – but I’ve found that the best combo is black forest ham, and a mix of cheddar, monterrey jack and mozarella cheese.
I happened to have caramelized onions in the fridge, and those are a great addition to this dish. Also, I’ve tried this with both dried and fresh thyme – and the best outcome is always with fresh tyme. The flavors are amazing.
Also, to give it a sweet touch, melt a bit of butter with maple syrup and add it on top of the croissants. you’ll be the hit of the brunch. Serve with a green salad with honey mustard dressing.

Yields 6 -8 servings
Ingredients:
8 croissants, cut in half, lengthwise
5 eggs, beaten
1 cup of heavy cream
1 tablespoon finely chopped fresh thyme leaves
1 teaspoon salt
½ teaspoon ground pepper
15 slices of thin black forest ham
½ cup shredded mixed cheese
2 tablespoons maple syrup
1 tablespoon unsalted butter
1 cup caramelized onions, optional
Directions:
- Grease a 13-by-9-inch baking dish and set aside.
- In a large mixing bowl whisk together the eggs, heavy cream, thyme leaves, salt and pepper. Submerge croissant halves in liquid until completely soaked.
- Arrange croissants in baking dish, overlapping slightly if necessary. Arrange each thin black forest ham in between the croissants. Cover with plastic wrap and refrigerate until ready to bake, up to a day ahead of time.
- When ready to bake, remove dish from fridge and sit at room temperature for half an hour. Add the caramelized onions on top of the croissants and the shredded cheese.
- Preheat oven to 375 degrees F (190ºC). Melt the butter and add the maple syrup and pour over the croissants. Bake uncovered for 25- 30 minutes, until golden brown. Serve immediately.
