Chicken & Vegetable Burritos

Burritos are a delicious way to use up the vegetables we have in the refrigerator. In this post, we give you an idea of what you include with the vegetables and legumes that we use to fill our burrito, if you have cooked rice available you can also add a little to make it even more satisfying.
To cook the chicken, we did it in the simplest way, using a seasoning that gives us a lot of flavor, a little oil and a frying pan. With Mondu burrito seasoning we seasoned both sides of the chicken breasts and browned them for a few minutes on each side.
Then we cut them into thin slices and together with our selection of ingredients we formed our burritos and served them for dinner. This recipe was a total success, and we are sure that you will love it too.

Chicken and Vegetable Burritos
Yields 4 servings
Ingredients:
4 large flour tortillas, for burritos
2 chicken breasts, boneless
½ red onion, thinly sliced
½ head of small iceberg lettuce, cut into thin strips
2 Roma tomatoes, cut into small cubes
1 cup black beans, drained
1 cup grated cheese mixture (for tacos), or more to taste
sour cream, for topping
cilantro, for topping
2 tbsp Mondu Burrito seasoning
Mondu Chipotle Sauce
Olive oil
Procedure:
- Heat a medium skillet over medium-high heat.
- Season the chicken breasts on both sides with Mondu Burrito Seasoning. If the breast is very thick, cut it in half lengthwise before seasoning.
- Add a little oil to the pan and brown the breasts for 5 minutes on each side, at medium temperature. They should register 165ºF with a thermometer. Let them rest for a few minutes before cutting them into diagonal slices. Set it aside.
- To assemble the burritos, place in the middle of the tortilla: lettuce, grated cheese, tomato, beans, onion, sliced chicken, cream, and cilantro. Do not place too much so that you can roll the burrito without it falling apart.
- Fold the left and right ends first and then begin to roll without releasing the sides, so that they are tucked in, forming a cylinder.
- When finished, leave the edge facing down and cut the cylinder in half to form two pieces.
- Serve with additional sauce, if desired. It can be tomato salsa or Mondu Chipotle Sauce for a spicy kick. Enjoy!
