Washington Apple Slaw

Give the classic slaw a twist! Add apples to your classic cabbage and carrot mix for a delicious and colorful side dish.
For our slaw, we chose Golden Delicious apples, as they are some of our favorites to use in salads. Its mild and juicy sweet flavor brings colors to your plate, but also a touch of sweetness to our slaw. We find this type of slaw is best served with a pulled pork, hamburgers or ribs, as it goes great with anything pork. Make sure to use fresh produce when preparing for the best taste.

Washington Apple Slaw
Yields 6 servings
Ingredients, for the apple slaw:
¼ head green cabbage, outer leaves removed
¼ head red cabbage, outer leaves removed
2 cups shredded or julienned carrots
1 large Washington Golden Delicious or Gala apple, cored and julienned
⅓ cup chopped fresh parsley
Ingredients, for the dressing:
¾ cup mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons honey
Salt and freshly ground pepper, to taste
Directions
- Using a knife, slice each quarter of cabbage into thin shreds.
- Transfer the shredded cabbages to a large bowl and add the shredded carrots and apple. Toss to combine. Reserve.
- Prepare the dressing by whisking all the dressing ingredients in a bowl. Taste and adjust seasoning as needed.
- Pour the dressing over the apple slaw, tossing gently to combine so everything is thoroughly coated. Then, add the parsley, tossing again to combine. Refrigerate for 1 hour before serving for the best flavor. You can store it for up to 5 days in the refrigerator.
Notes:
- Serving suggestions: you can serve this slaw over pulled pork to make sandwiches or tacos. It goes well with any BBQ food!
