Air Fryer Chicken Sandwiches

If you want a lunch that will be filling and also won’t make a mess in the kitchen, look no further. We love a recipe that uses the air fryer because secretly we don’t like cleaning the stove (who does? 🤭). We’re using it so we can use less oil for our fried chicken, and still pack plenty of flavor with the Taco Seasoning by Mondu. Taco seasoning? Yes! It brings so much flavor (and a dash of spice) that you’ll love it.
For the mayo, we opted for a hot mayo – which you can adjust to your family’s liking. We used about 1 tablespoon of Mondu’s Chipotle hot sauce for half a cup of mayo. You can use this mayo for both the sandwich and the fries.
Oh, and since we were already taking the air frier out, we opted for a few frozen fries as a companion for the dish. We sprinkled them with Lemon Pepper seasoning from Mondu, but they are also great with salt, pepper, and paprika. Use a bit of cooking spray and cook them according to the package.

Chicken Sandwiches
Makes 4 sandwiches
Ingredients, for the chicken:
2 skinless boneless chicken breasts
½ cup all-purpose flour
1 egg, beaten
1 ½ tablespoons Mondu Tacos al Pastor Seasoning
1 teaspoon salt
cooking spray
Ingredients, for the sandwiches:
4 burger buns, buttered and toasted
4 green lettuce leaves
1 large tomato, sliced
2 dill pickles, sliced into rings
red onion rings, to taste
Ingredients, for the spicy mayo:
¾ cups mayonnaise
1 teaspoon of Mondu Chipotle hot sauce (or to taste)
Directions:
- Pre-heat the air fryer to 200ºC.
- Whisk together the flour and Mondu Tacos al Pastor seasoning.
- Salt both sides of the chicken breasts, and dredge the chicken through the flour mixture, then into the egg, then back into the flour mixture again shaking off the excess.
- Place the chicken in the air fryer. Spray the chicken with cooking spray lightly, and cook for 15 minutes, turn the pieces over, spray with cooking spray, and cook for 10 more minutes.
- Lightly butter and toast the cut sides of your buns and build your crispy chicken sandwiches with desired toppings.
- To prepare the spicy mayo, mix ¾ cup of mayonnaise and the Mondu Chipotle sauce.
