Washington Apple Croissants

A simple dessert, with puff pastry and apple slices. We used Washington Granny Smith apples to make them because they are one of the apple varieties we like to use the most for baked desserts. Their tartness and firmness in their texture make them perfect for this dish.
The apple slices should not be too thin, so that they are easily wrapped in puff pastry strips. We cut out about 3 slices from each apple. To cut out the centers, we used the back of a large piping tip, you can use a round cookie cutter of the appropriate size if you have it.
When wrapping them with the dough, you just have to make sure that there are no open spaces, and that you overlap each turn so that it is well closed. You can see in the photographs how we did it.
Before baking, they are brushed with egg wash to help them turn golden brown and sprinkled with sugar and cinnamon to taste. 25 minutes later, the dessert will be ready. You can eat them on their own or serve with ice cream and caramel.

Washington Apple Croissants
Yields: 10-12 servings
Ingredients:
3 – 4 medium Granny Smith Washington apples
1 pound puff pastry
2 tablespoons sugar
cinnamon, to taste
1 egg, for egg wash (1 egg and 1 tablespoon of water)
Directions:
- Preheat the oven to 400ºF. Line a baking sheet with parchment paper.
- Cut the apples into thick slices horizontally, removing the tops and bottoms. Remove the core with a round cookie cutter.
- Roll out the puff pastry and cut into strips about 1-inch thick.
- Wrap each of the apple rings as needed: wrap it around the apple ring and under. Make sure to overlap the strips a little and press them down so they don’t unravel when baking. You can stretch the pastry as needed and try to keep the middle hole open if possible.
- Place the apple pastries on the baking sheet, and brush with egg wash. Sprinkle with sugar and cinnamon.
- Bake at 400ºF for about 20 to 25 minutes, until puffy and golden on top. Cover lightly with aluminum foil if they color on top too quickly.
- Serve warm, they are delicious on their own, or you can serve them with a scoop of ice cream and a drizzle of caramel.
