Greek Yogurt Bagels

This was more of an impulse to follow the TikTok trend of a two ingredient recipe for quick bagels. It works – all though its not classic original bagels, this is perfect for any breakfast where you don’t want to go to the store if you have these ingredients at home. As I didn’t have cake flour, I am adding a few ingredients to make it yourself: baking powder (and salt, for good measure).
I made the recipe quite a few times, and the key was basically two things: one, sift the ingredients. This will avoid you getting little pockets of baking power or salt. Second, kneading long enough for the dough to be smooth and not sticky. You can knead by hand, or with a stand mixer as I did here. Either way, it works perectly.
For the toppings, I did two with poppy seeds, but you can add anything you’d like, and for the sweet version, I added pumpkin pie spice with brown sugar. Both came out great and can’t wait to try them again.

Greek Yogurt Bagels
Adapted from Recipe Girl
Yields: 4 small bagels
Ingredients, for the bagels:
2 cups all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
2 cups greek yogurt
Ingredients, for the toppings:
1 egg + 1 teaspoon of water
poppy seeds + pinch of salt, for a savory topping
Pumpkin Pie Spice + brown sugar, for a sweet fall topping
Directions:
- Preheat your oven to 375º F. Prepare a baking sheet with parchment paper and set aside.
- In the bowl of a stand mixer, sift the baking powder, salt and all-purpose flour. Add the greek yogurt and mix until you form coarse sand. Move over to the mixer, and knead until the dough is smooth and elastic – this will take about 4 minutes with the stand mixer, but if you’re doing it by hand, it can take you about 10 minutes.
- Divide the dough into 4 equal parts, and shape each one into calls. Using your thumb, make a hole in the middle and gently pull and stretch to make a ring.
- Arrange the shaped bagels on the prepared baking sheet. Prepare the egg wash by whisking the egg and water in a small bowl, brush over the bagels. Sprinkle desired toppings over bagels.
- Bake for 20 to 22 minutes at 375ºF, then increase the oven temperature to 450ºF and bake for an additional 4 minutes to get them golden brown.
- Serve immediately, or let cool and store in an air-tight container for up to 24 hours.
