Food Pairings: Malbec & Marinara

Pasta and wine, the classic duo, Terrazas de los Andes Reserva Malbec 2021 is the wine we will be pairing with our recipe. A wine from Mendoza, which on the nose is fresh and intensely fruity, we can perceive fruits such as blackberries, plums, and strawberries, along with aromas of violets and mountain spices typical of cold climate Malbecs. On the palate it is fresh, tends to be dry and with a light body.
The ideal pairing for this delicious Malbec is our Pasta with Marinara Sauce. Its ingredients are basic: tomato puree, olive oil, garlic, salt, pepper, and a touch of oregano. To balance the acidity of the tomatoes we always add a touch of sugar.

This wine is very versatile and can be accompanied with multiple dishes of grilled beef or pork. Dishes with tomato sauce and chocolate desserts with red fruits or nuts.

Classic Pasta & Marinara Sauce
Yields: 2 cups
Adapted from: Martha Stewart
Ingredients:
1 28-oz. can of pureed tomates
2 tablespoons olive oil
4 cloves garlic, minced
Salt and pepper
½ tsp sugar
½ tsp oregano
500 grams of pasta
Directions:
- In a straight-sided skillet, heat oil over medium. Add garlic and cook until fragrant, about 30 seconds. Add pureed tomatoes and season with about 1 teaspoon of salt and ½ teaspoon of pepper, add the sugar and oregano. Bring to a simmer and cook until thickened over low heat, about 15 minutes.
- While sauce thickens, cook pasta according to package directions. Drain 2 minutes before the indicated time so that it is al dente. Reserve 1/3 cup of the pasta water.
- Add the cooked pasta to the sauce that has already thickened and add the pasta water. Stir carefully so that everything is incorporated, the pasta will finish cooking in the sauce.
- Serve with Parmesan cheese and pair with Vino Terrazas Malbec Reserva
