Fried Sausage & Apples Skillet

If you are looking for a quick meal to prepare for dinner or for a Sunday at home when you don’t want to rush, but want something delicious and comforting, this is the recipe for you. The mixture of sausages, apples, and mustard is a classic combination that never fails.
We recommend using good-quality smoked sausages. These have a delicious flavor that combined with the sweetness of Washington Gala and Fuji apples and a touch of mustard and the herbs that we added during cooking give this dish a delicious and full flavor. We recommend accompanying it with bread.

Fried Sausage & Apples Skillet
Yields 4 servings
Ingredients:
2 pounds of smoked sausage
1 pound Fuji Washington Apples, about 2 large apples or 3 medium
1 pound Gala Washington Apples, about 2 large apples or 3 medium
¼ cup water
1 fresh thyme sprig
½ teaspoon paprika
salt and pepper to taste
grainy or dijon mustard and bread, for serving
Instructions:
- Wash, core, and cut half the apples in quarters. Thinly slice the other half.
- In a large heavy-bottomed pan over medium-high heat cook sausages until they begin to brown then add the herb and spices, the apples and continue to cook, stirring apples and turning the sausage frequently.
- When the apples and the sausages are browned, after about 3-5 minutes add ¼ cup water and cover the pan.
- Simmer and steam for 3-5 minutes, then remove the lid and continue cooking until the sausages are browned and heated through, the larger apples have softened, and the sliced apples have turned to applesauce.
- Remove from heat and transfer the sausage to a cutting board. Slice the sausage and either return to the skillet or transfer the apples, sauce, and sliced sausage to a serving platter.
- Serve as is or with grainy mustard and a crusty loaf of bread.
