Key Lime Poppy Seed French Toasts

A sweet, simple take on traditional French Toast with lemon zest and poppy seeds – almost like a key lime pie and a french toast had a baby. Adding key lime zest to the custard mix adds so much zing to this dish that you’ll want it in your summer breakfast rotation.
I recommend serving it with a sprinkle of powdered sugar, as well as a small bit of blackberry jam for a sweet and tart bite of goodness.
This recipe makes enough for two servings, so you can increase the servings as needed or scale it down for a single serving.

Lemon & Poppy Seed French Toast
Makes 2 servings
Adapted from The Sugar Hit
Ingredients:
2 eggs
½ cup milk
2 teaspoons greek yogurt
1 teaspoon honey
½ teaspoon vanilla
1 teaspoon poppy seeds
1 lemon, zest and lemon
4 slices brioche (or other stale bread)
icing sugar and jam, for serving
Instructions:
- In a small bowl, whisk together the eggs, milk, yogurt, vanilla, honey, poppy seeds, as well as the juice and zest of the lemon.
- Warm the frying pan over medium heat and add a bit of butter.
- Place two slices of bread into the mixture, then turn them around so they are soaked and covered. Add to the heated pan and cook unbothered from 2 to 3 minutes each side, until they are golden brown,
- Continue with the rest of the bread slices.
- Serve warm with a dusting of powdered sugar and a dollop of your favorite jam.
