Apple Kale Salad

You will enjoy this kale salad, even if you are not a kale lover! Letting the leaves sit with the dressing for at least 10 minutes to up to 30 min, makes their texture become softer and the dressing is so tasty!
The combination of the crisp sweet apples, spiced pecans, and the creaminess of the crumbled goat cheese all tied up with the tangy dressing still make this salad a savory one, you can add 1 tablespoon of honey if you want a sweeter taste. If you add some grilled chicken on top you have a complete meal!
This recipe is great for meal prepping. You can build it in glass jars for an on-the-go meal.
We recommend you use Washington Gala Apples for their crisp texture and sweetness. If you don’t have goat cheese available you can substitute any soft farmer’s cheese.

Apple Kale Salad
Makes 2 servings
Ingredients, for the salad:
1 large bunch of kale, stems removed and leaves shredded or roughly chopped
2 Gala Washington apples, thinly sliced
4 ounces goat cheese, crumbled
1/2 cup spiced pecans
1⁄3 cup extra virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon salt
1⁄2 teaspoon ground black pepper
Ingredients, for the spiced pecans:
1⁄2 teaspoon ground black pepper
1⁄2 teaspoon cinnamon
1⁄2 teaspoon brown sugar
1⁄2 teaspoon cayenne
1 teaspoon of salt
1⁄4 cup pecans
2 tablespoons of butter
Instructions:
- For the pecans: In a small bowl, combine ½ teaspoon ground black pepper, ½ teaspoon cinnamon, ½ teaspoon brown sugar, ½ teaspoon cayenne, and 1 teaspoon of salt. In a medium bowl, add pecans and 2 tablespoons of butter. Toss to coat. Add spice mixture and toss again until fully coated. Add the pecans in a single layer (preferably) and cook at 300ºF (150ºC) for 14-17 minutes. Shake the basket every 5 minutes.
- In a small bowl, make the apple cider vinaigrette by whisking together olive oil, apple cider, vinegar, mustard, salt, and pepper.
- Place kale in a large bowl and pour dressing over top. Toss to combine and let sit for 10 minutes.
- Add sliced apples, crumbled goat cheese, and spiced pecans on top. Season with additional salt and pepper to taste.
