Rosé Wine Pairing: The Perfect Charcuterie Board

We are in full season to enjoy the holidays with friends and family so we wanted to share this great how-to-build-your-own board post so that you can prepare a delicious one accompanied by rosé wine for a joyful and festive gathering.

Wine is an excellent option for any gathering, and among them, rosé is one of the most versatile ones for pairing. For this particular board we chose Whispering Angel which has tasting notes of red berries, peach, and citrus.

As ingredients for our board, we have included not only cheese and ham but also crudités that pair very well with our wine. Specifically, we have chosen red bell pepper, carrots, and radishes. The crudités can be accompanied by a creamy dressing or a simple aioli. Aiolis are basically flavored mayonnaise, you can add garlic, herbs, or zest to them. Below you will find a simple recipe that you can add to your board.

On our reel on Instagram, you can see how we have assembled our board, in addition to our fruits and vegetables we used Vinoteca packages that are ready to be assembled, as well as the baguette toast for the base. We have chosen one with Manchego cheese, and cured hams such as salami or Serrano.

Tips

  • We recommend you have the ingredients you are going to use on hand, already cut and ready to place.
  • Choose a base of adequate size. Cutting boards, whether rectangular or round, are an excellent option. In order not to stain them, it depends on the ingredients, you can place parchment paper to add the ingredients on top.
  • We like to start by placing the small bowls where you would place jellies, honey, olives, or dressings. With them, we have a starting point, and we can start placing ingredients around them. We like to start by placing the different cheeses.
  • Then we go on with the cured meats or hams, they can be folded into triangles or cones, or if they are long like a slice of prosciutto, they can be folded like an accordion.
  • Next, we can continue with crudités and slices of bread. Finally, the fruits.
  • As the last step, fill in the spaces that are empty with the corresponding ingredient.

Aioli

Yields 1 cup

Ingredients:
1 garlic clove
2 egg yolks
1 tablespoon (or more) fresh lemon juice
½ teaspoon Dijon mustard
½ cup grapeseed oil
½ cup olive oil

Procedure:

  1. Pulse garlic in a food processor until finely chopped. Add egg yolks, lemon juice, and mustard; season with salt, then process to combine.
  2. With the motor running, slowly pour in grapeseed oil a few drops at a time. After about ¼ cup has been added, scrape down the sides of the bowl with a rubber spatula.
  3. Continue to add grapeseed oil with the motor running, then add olive oil and process until combined. If the sauce is too thick, add water 1 tablespoon at a time. Taste and add more salt and lemon juice, if needed.
