Chocolate Chip & Baked Peanut Cookies

We are already at the time of year when we most like to prepare baked desserts like these chocolate chip cookies with a special ingredient: baked peanuts without salt. We really like Naú brand, this version without salt is ideal for cooking because it adds a delicious touch of flavor without altering the recipe with added salt.

Chocolate Peanut Cookies

This cookie recipe is the basic one that we love to make, the cookies come out with the chewy texture that we love, and adding peanuts elevates them to another level completely. The chocolate chips can be the ones you like the most, we prefer mini semi-sweet chocolate chips for these cookies. You can use a combination of semi-sweet and milk chocolate chips, or even white chocolate chips.

Chocolate Chip & Baked Peanut Cookies

Adapted from this The Foodies’ Kitchen recipe

Ingredients:
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup (2 sticks) butter, softened
¾ cup granulated sugar
¾ cup packed brown sugar
1 ½ teaspoons vanilla extract
2 large eggs
1 cup of mini semi-sweet chocolate chips
1 cup chopped toasted unsalted Naú peanuts

Preparation:

  1. Preheat oven to 375° F.
  2. Combine flour, baking soda, and salt in a small bowl.
  3. Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts.
  4. Using a cookie or ice cream scoop drop cookies onto an ungreased baking sheet. Place cookies 2 to 3 inches apart.
  5. Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
