Happy Hour: Tequila Mojito

The Mojito is traditionally prepared with rum, mint, and sugar. We are going to give you a refreshing twist using Tequila Volcan de Mi Tierra Cristalino with a mixture of spearmint and simple syrup, instead of sugar. You can substitute with mint if you can’t find spearmint. The difference between the two is that mint (peppermint) has a more pungent minty flavor.
We prefer to use simple syrup for the texture, to avoid sugar crystals when we are enjoying our drink. Simple syrup is quite easy to make, just add equal parts of sugar and water and let it heat over the stove so the sugar dissolves. Let it cool completely before adding it to your drink.
This cocktail is ideal for hot days, so if you are planning days at the beach, consider this recipe which is very easy to prepare. It is assembled in the glass in which it is going to be served: lemon juice, simple syrup, tequila and spearmint, a lot of ice, and a top-up of sparkling water that gives it the final refreshing touch.

Tequila Mojito
Serves 1 cocktail
Ingredients:
4 large spearmint leaves, or 8 small ones
1 ounce lime juice
1 ounce simple syrup
1 ½ ounces Tequila Volcan de Mi Tierra Cristalino
2-3 ounces soda water or club soda
Instructions:
- In a tall glass, add the lime juice and simple syrup.
- Add the spearmint and give it a very light tap with a muddle stick (or the handle end of a wooden spoon) to lightly bruise the leaves, releasing their oil, but not pulverizing the leaves.
- Pour in the tequila, give it a stir with the muddler or spoon.
- Fill the glass with ice.
- Float 2-3 oz. of soda water or club soda to the top of the glass.
- Garnish with a lime wedge and a couple fresh spearmint sprigs.
- Before garnishing, lightly clap the mint between the palms of your hand, releasing their oils and fresh scent!
