Happy Hour: Watermelon Paloma

Summer is already here, and we are craving refreshing drinks. There are many to choose from, and one of the classic drinks is the Paloma, a tequila cocktail made with grapefruit juice. In this variation, we use Volcán de Mi Tierra Cristalino, a Premium tequila with a fusion of aromas: cooked agave, tobacco, dried fruits, chocolate, and vanilla come together to give it distinctive tasting notes. For purists, this tequila is ideal for sipping or on the rocks.
Returning to our cocktail, we use fresh watermelon which we blended and passed through a strainer to combine with orange juice, lemon juice, tequila, and as a final touch when serving it, a splash of seltzer. This recipe is for sharing, it yields 1 pitcher or 5 cocktails.
It’s quick to make! Everything is mixed inside the pitcher and served in collins glasses over a lot of ice. To give it an extra punch, we soaked the glass rims with lemon to cover them with a mixture of salt and chili powder.

Watermelon Paloma
Serves 1 pitcher or 5 cocktails
Ingredients:
6 cup watermelon diced
1 cup orange juice
1 ¼ cup Volcán de Mi Tierra cristalino tequila
¼ cup Lime juice fresh squeezed
¾ cup sparkling water
1 cup Ice
5 lime wedges to garnish
coarse salt, or salt and chili powder to rim glasses
Instructions:
- Add the watermelon to a blender and pulse until smooth. Strain into a pitcher
- Add the orange juice, tequila and lime juice and stir to incorporate. Add the ice.
- Rub a lime wedge over the edge of the glass and dip in salt to rim the edge. Fill until ¾ full and top with the sparkling water.
- Garnish with lime wedges, watermelon or mint sprigs and serve
