Honey Mustard Chicken Apple Skillet

We all want new recipes to prepare chicken at home, this is a recipe to refresh the usual repertoire that everyone will love. And the best thing is that it is very easy to prepare.
We recommend using chicken thighs or legs, for their flavor, but you can substitute bone-in and skin-on chicken breasts. The mixture of the honey mustard sauce that we use to bake it combined with the apples, thyme, and onion gives this dish a spectacular flavor.
We chose Washington Gala apples because they have a medium sweetness and a good texture to cook with, they hold their shape nicely and we are able to get this variety all year round.
As for sides, this goes well with roasted potatoes and a green salad.

Honey Mustard Chicken Apple Skillet
A Foodie’s Kitchen original recipe
Yields: 2-3 servings
Ingredients:
4–5 chicken thighs or legs bone-in, and skin on, 1½ pounds
1 tablespoon olive oil
3-4 Washington gala apples, 1½ pounds
1 red onion
1 cup chicken stock
3 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon sea salt, or to taste
½ teaspoon ground black pepper
1 Tablespoon chopped fresh thyme
Instructions:
- Preheat the oven to 400ºF.
- Core and cut the apples into ½-in. slices. Cut the onion into ¼-in. half moon slices.
- Season chicken thighs with salt and pepper, on both sides.
- Preheat a large oven proof skillet over medium high-heat until the pan is hot but not smoking. Add the oil to the pan and swirl to evenly coat the bottom. Add the chicken thighs, skin side down, and lower the heat to medium. Cook until the skin is golden brown, then turn them over and brown the other side, 8 minutes total.
- Remove the chicken thighs from the pan, and turn off the heat. Add the sliced apples and onions to the pan, and place the chicken thighs evenly around skin side up, nestling them down into the apples and onions. Pour the chicken stock into the pan. Season lightly with salt and pepper.
- Mix mustard, honey and thyme and pour over the top, paying special attention to coating the skin on the chicken thighs.
- Place the skillet into the oven and bake until the chicken thighs are completely done, about 25-30 minutes.
- Serve the finished skillet dinner with your choice of sides.
