Apple Cinnamon Bake

These lazy days are in need of delicious and easy desserts, and this recipe is just what the doctor ordered. I’ve made the recipe several times and it’s a winner. Takes a few minutes to prepare and a bit longer to bake, but pretty low-maintenance.
No need to peel the apples, since we’re slicing them thinly, it won’t matter. I also added a few cranberries and it gave the bake a great taste. If you don’t have cranberries, you could add blueberries, raspberries or strawberries, but since those are much softer fruits, I would add those after removing the tin foil to avoid the softer fruits to overcook.

Apple Cinnamon Bake
Adapted from Minimalist Baker
Yields: 6 servings
Ingredients:
7 medium to large apples
1 cup fresh or frozen cranberries (optional)
½ cup brown sugar
1 ½ teaspoon ground cinnamon
½ teaspoon ground ginger
1 pinch nutmeg
3 tablespoons cornstarch
1 pinch salt
2 tablespoons lemon juice
1 tablespoon orange juice
2 tablespoons water
vanilla ice cream, for serving
Preparation:
- Preheat oven to 350ºF, and prepare a 9-by-13-inch baking dish.
- Core, quarter, and thinly slice lengthwise the apples using a pairing knife. Make sure to slice the apples consistently, so they cook evenly.
- Add the apples to the baking dish, and sprinkle the brown sugar, cornstarch, cinnamon, ginger, nutmeg, salt, water, lemon and orange juice. Toss to combine. add the and cover with foil.
- Bake for 45 minutes, then remove the foil and bake for 10 additional minutes. The apples should be tender, and slightly caramelized.
- Serve with whipped cream or a scoop of vanilla ice cream, and drizzle the sauce on top.
