Easy Pumpkin Muffins

It’s officially Pumpkin Season 🍁 And I know, it’s one more Pumpkin Muffin recipe, but trust me when we say that this is a quick and easy one bowl recipe that will be in your favorites as soon as you prepare it.

Quick Pumpkin Muffins
Adapted from Lunch Pails and Lipstick
Yields: 12 muffins
Ingredients, for the muffins:
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon of cinnamon
½ teaspoon of nutmeg
½ teaspoon salt
1 cup pumpkin puree
⅓ cup vegetable or neutral oil
2 eggs
1 teaspoon of vanilla
1 ¼ cups sugar
Ingredients, for the topping:
1 tablespoon sugar
1 teaspoon cinnamon
Instructions:
- Preheat oven to 350ºF.
- Prepare a muffin tin with 12 cupcake liners.
- For the topping, mix together 1 teaspoon of sugar and 1 teaspoon of cinnamon in a small bowl, set aside.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.
- In a large bowl, whisk the pumpkin puree, oil, eggs and vanilla until smooth.
- Add in the flour mix until combined and you no longer see strokes of flour, careful not to over-mix.
- Divide the batter evenly among the muffin cups, sprinkling the cinnamon and sugar mix on top of each muffin.
- Bake from 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool for 5 minutes before turning them out onto a cooling rack.
