Meal Prep: Balsamic Peach Pork Chops

This is one of my Meal Prep recipes, skillet meals are a must in my menu repertoire and I always look for easy recipes that you can make in just one skillet or pot.  Lately, we’ve been posting the weekly meal prep menus on Instagram to help those who would like to try the meal prep method ease into it. 

We don’t eat pork chops very often, but when we do I like to mix in fruits like apples, plums, or peaches into the recipe. I love the combination. This recipe is simple to follow, and the flavor is amazing. But, you do need to cook the pork chops in batches if you are using more than 4 like I did.  The pork chops you find in Guatemala are usually pretty thin, and they are smoked, so cooking time is not that long. 

Balsamic-Peach Pork Chops

When adding your sauce, make sure you let it simmer for about 8-10 minutes, which will allow it to thicken up a bit by reducing the balsamic vinegar, which will make it sweeter and get rid of the pungent vinegar flavor.

Note: If you use fresh peaches for this recipe, follow the recipe directions in the same manner. On the ingredients, substitute de 1/2 cup of canned peach syrup for another liquid, such as apple juice or orange juice.

Balsamic Peach Pork Chops

Adapted from Half Baked Harvest
Recipe serves 4-6

Ingredients:

6 bone-in smoked pork chops
salt and black pepper
2 tablespoons extra virgin olive oil
½ cup balsamic vinegar
1 tablespoon honey
1 tablespoon chopped fresh oregano or thyme leaves
4 canned peaches, sliced
½ cup of syrup from canned peaches
1/2 cup fresh basil

 

Procedure:

  1. Season the pork chops all over with salt and pepper.
  2. Add olive oil to a large skillet, when the oil shimmers, add the pork chops, in batches, and sear on both sides for 5 minutes per side. Set the pork chops aside.
  3. In a small bowl, whisk together the balsamic vinegar, honey, peach syrup, and oregano or thyme.
  4. Transfer the peach halves to the hot pan, and let them brown for a few minutes. Return the pork chops to the pan and pour the balsamic sauce over everything. Lower the heat and let the sauce simmer for about 8 minutes, if it starts getting too thick, add ¼ cup of water.
  5. Top with feta, or blue cheese and fresh basil. Serve the pork with the peaches and balsamic sauce from the pan. Enjoy!
