Smashed Sweet Potatoes

We eat sweet potato regularly at our house, either baked whole, roasted in cubes, or in a baked version of fries. This recipe for smashed sweet potatoes is probably our favorite way to eat them! They pack a ton of flavor with its simple seasoning, and the added olive oil and broiler time, in the end, makes them brown and crispy.
These are great to make along with a roast chicken, for example. Or even your favorite hamburger.
Make sure you cut them into rounds with even thickness, so they bake properly, and you avoid getting some of them cooked and browned before the others.
You can smash them using a fork or a potato masher, but we prefer to use the flat bottom of a glass (you can lightly spray it with cooking spray) we think they come out evenly smashed and round.

Smashed Sweet Potatoes
Ingredients
Preparation:
- Preheat oven to 425° and slice potatoes into 1” thick rounds.
- In a small bowl, combine olive oil, garlic, and thyme and season with salt and pepper. Whisk to combine. Pour oil mixture onto potato rounds and toss until coated. Place sweet potatoes in an even layer on a large baking sheet, about 1” apart.
- Bake potatoes until fork-tender, 25 to 30 minutes. Remove from oven and turn oven broiler to medium. Using a fork, potato masher, or the flat bottom of a glass, smash potato slices. Broil 3 to 5 minutes, until golden and crispy (keep an eye on them!)
- Serve with a sprinkling of parmesan cheese, if you like.
