Matcha Cookies

This is the perfect recipe to make while social distancing 😆 It’s a genius small batch recipe, and a gourmet upgrade the regular sugar cookies, I added a bunch of matcha (thanks for the matcha Ma ✨) and white chocolate for a treat.
And, if you don’t have any white chocolate around, its ok. It’s a tiny taste upgrade for the cookies, but if you’re skipping the chocolate, I’d recommend coating the cookies with granulated sugar before baking. Enjoy! 🍵

Matcha Sugar Cookies
Recipe adapted from Dessert for Two
Makes 8 cookies
Ingredients:
4 tablespoons unsalted butter, melted
⅓ cup sugar
1 teaspoon vanilla extract
1 egg yolk
½ cup + 2 tablespoons all-purpose flour
1 tablespoon matcha powder
¼ teaspoon baking soda
a pinch of salt
2-oz. white chocolate chunks
Directions:
- Preheat the oven to 350ºF, and line a baking sheet with a silicone mat or parchment paper.
- Stir together the slightly cooled melted butter, sugar, and vanilla extract. Stir very well to combine.
- Add the egg yolk and mix until combined.
- Sift the flour, matcha, baking soda and salt over the dough, and stir just to combine.
- Add the chopped white chocolate chunks to the mix and combine.
- Using a cookie or ice scream scoop, portion the dough. Each scoop is of about 1.5 tablespoons each.
- Roll each dough ball, and space evenly on the prepared baking sheet.
- Bake for 10-12 minutes, until the cookies spread, start to crackle and dry on top.
- Let the cookies cool for 2 minutes before moving them to a wire rack to cool completely and serve.
