Carrot Pancake Cake

Who said pancakes are only for breakfast? We joined the Gold Medal challenge and prepared a Carrot Pancake Cake: #CakePan. And as a surprise for our fans in Guatemala… you can win a KitchenAid mixer with Gold Medal!

Carrot Pancake Cake
A Foodies’ Kitchen original recipe
Ingredients, for the pancakes:
1 cup pancake mix
¾ cup of milk
1 tablespoon of vegetable oil
1 egg
¾ cup of grated carrot
1 teaspoon cinnamon
1 pinch of nutmeg
½ teaspoon vanilla
1 teaspoon grated fresh ginger
Ingredients, for the frosting:
1 cup whipping cream
1 ¼ cups of confectioners’ sugar
4-oz. cream cheese
¾ cup of walnuts, for decoration
Directions:
- In a medium bowl mix the pancake cake mix, cinnamon, ginger, nutmeg. In another bowl, combine the milk, vegetable oil, vanilla, and egg.
- Incorporate the liquid mix into the dry mix, and stir with a whisk until it is smooth.
- Finally, fold in the shredded carrot.
- On a small and previously heated skillet, form the pancakes by pouring about ⅓ cup for each pancake. Cook for 3 minutes on each side at medium-low temperature.
- While the pancakes cool, prepare the frosting: Beat the cream until firm peaks form, and add the icing sugar and finally the cream cheese. The texture should be thick.
- To assemble the pancakes, pipe the frosting in the design that you like the most on each pancake, alternating with walnuts.
- Build a tower with them, and finally decorate with raw carrot shavings.
