Since March 16th our country has been in lockdown due to Covid-19, so we decided to upload our quarantine recipes to help inspire and give fresh ideas to our followers. We are going to be cooking a lot more at home, and ideas will run out fast. We are here to help! We have been sharing our recipes on Instagram Stories (then saved on highlights per recipe) and now we are posting them here so you can easily find them.
This egg salad has a twist, it has chopped apples! It’s great as a side dish or to use in a sandwich for a quick meal.

Egg Salad
Recipe adapted from Preppy Kitchen
Yields: 4-6 servings
Ingredients:
8 hardboiled eggs, peeled
⅓ cup mayonnaise (or yogurt)
2 teaspoons lemon juice
2 teaspoons Dijon mustard
½ teaspoons paprika
½ teaspoons salt
¼ teaspoons ground pepper
1 garlic clove, minced
½ cup cilantro
3 spring onions, chopped only the white part.
½ teaspoons dry dill
1 cup apple, diced
½ cup celery, diced
Preparation:
- In a small bowl, mix the mayonnaise, lemon juice, Dijon mustard, paprika, salt, ground pepper, and garlic. Mix well and set aside.
- In a large bowl, add the chopped spring onions, cilantro, dill, apple, and celery. Mix to combine. Add the chopped hardboiled eggs and gently fold in.
- Add the mayonnaise mixture and gently mix in until it is well combined.
- Serve as a side dish, or over lettuce in a sandwich.
