Snickerdoodle Blondies

Well, as mostly I’m eating plenty of veggies, fruit – a good healthy balanced diet… sometimes you just gotta give in to a sweet delicious dessert. I’ve been literally dreaming of these babies for over a week. So, I just had to bake’em. Since this recipe for Snickerdoodle Blondies makes plenty (16 squares – or 36 if you cut them really small). I obviously shared these small bites of heaven.
The recipe is pretty straight-forward. You don’t even need to take out the butter in advanced – you just need to melt it, and ready. Love that about it! The only downside… you need the blondies to completely cool down before cutting. That is the hardest part of this recipe. I made them in an afternoon, and waited for them to cool completely and cut them up until the next morning.
No matter when you cut them into squares, they are amazing! 💛

Snickerdoodle Blondies
Recipe by What’s Gaby Cooking
Yields: 16 1-in. squares
Ingredients, for the blondies:
1 cup unsalted butter, melted and cool warm
2 cups brown sugar
2 eggs, room temperature
1 teaspoon of vanilla extract
½ teaspoon cinnamon, ground
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon of baking soda
1 pinch of salt
Ingredients, for the topping:
2 tablespoons sugar
½ teaspoons ground cinnamon
Directions:
- Preheat oven to 350ºF. Spray a 9-by-9-inch baking pan with baking spray and line it with parchment paper.
- In a large bowl, combine the butter with the brown sugar, mix for about 2 minutes until combined.
- Add the eggs, one at the time, mixing well in after each addition. Finish with the vanilla and make sure to scrape down the sides of the bowl, mixing until fully incorporated.
- Add the all-purpose flour, cinnamon, baking powder, baking soda and salt to a medium bowl and mix until combined.
- Add the dry ingredients into the butter mix and slowly mix until the batter comes together and you can no longer see the flour.
- Pour the batter in the prepared baking pan, and sprinkle the cinnamon sugar on top. Bake from 30 to 35 minutes.
- Use a toothpick in the center of the blondies to check they are cooked through. Remove from the oven and let cool for at least 2 hours before serving.
