Little Foodies: Apple Pancakes

This recipe for apple pancakes is so good, you have to try it. They taste a little like an apple pie! It has small chunks of apple mixed into the batter and spooned on top and are definitely for a special occasion. The mixture of spices and the cooked apples will fill your kitchen with a delicious aroma.
To make them even more special, we wanted to try using the individual pans that we found in the Kitchen and Home Department at Almacenes Siman. They worked wonderfully, the batter did not stick to the pan at all, but we did use a spray oil.
When using pans of this type, the trick is that, when cooking the second side of the pancake, you have to flip it over a normal pan, which is already hot and ready to use, if you see below you will see a picture of this step.
The purpose of the original recipe is to make mini pancakes for children to take in their lunch box, which we think is a great idea! In this case, a normal skillet is used, and you should add the dough by spoonfuls to make 2-inch diameter pancakes.

Apple Pancakes
Recipe adapted from Healthy Little Foodies
Recipe makes 5 heart-shaped pancakes
Ingredients:
2 apples, finely chopped
1 teaspoon butter (for apples)
1 teaspoon cinnamon
120 grams all-purpose flour
2 teaspoon brown sugar
2 teaspoon baking powder
1 teaspoon vanilla extract
3/4 cup milk, room temperature
1 egg, room temperature
Procedure:
- Heat a nonstick skillet over medium heat and add 1 teaspoon butter. Add the chopped apple and cinnamon, reduce the heat, and saute until soft, around 3 mins. Remove from heat.
- In a large mixing bowl combine the flour, sugar, and baking powder. In a separate bowl mix together the egg, vanilla extract, and milk. Add the wet ingredients to the dry and stir. Don’t over mix, a few small and medium lumps are fine.
- Add half of the sauteed apples. Stir until just combined.
- Heat a nonstick skillet on medium heat. If using a shaped skillet, such as our heart-shaped one, also heat it on medium heat. (You will be using two pans) Spray with non-stick cooking spray, and fill the heart-shaped skillet with batter.
- When bubbles rise to the surface, flip onto the normal skillet (which is already hot) to let it cook on the other side. Repeat until the mixture is finished.
- Serve with sauteed apples on top.
