Little Foodies: Double Chocolate Mug Cake

Sometimes you feel like eating cake, but you don’t want to make the whole recipe. You can make a mug cake in minutes! If you are a regular baker, you will probably have all the ingredients at hand.
In Guatemala, you can’t find self-rising flour at the supermarket, which this recipe calls for. After doing a little research, we found out that using self-rising flour really helps in getting this mug cake to rise and get a domed top. You could use regular all-purpose flour, but the cake would turn out a little flat.
The good news is, it is easy to make your own self-rising flour at home!
You need
1 cup of all-purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt.
Mix all the ingredients and pass them through a sieve. That’s it!
All you need to do is mix all the ingredients and divide them equally between two mugs. We recommend you mix in the dry ingredients in one bowl, and the wet ingredients in another. Then incorporate the wet ingredients into the dry ingredients. This will help you get a better mixture.
When you put them in the microwave to bake, they will rise up quite a bit, so we recommend you fill your mugs about halfway up. Make sure your mugs are microwaveable and this recipe will be enough for two 10 oz mugs.
We will confess, we tried this recipe more out of curiosity, we were a little skeptic about a microwave cake. It turned out to be really good! We recommend you try this recipe next time you are in the mood for a little sweet treat.
These mug cake should be eaten right away; they do get a little dry if you leave them for later.

Double Chocolate Mug Cake
Recipe from Rosanna Pansino
Ingredients:
2 tablespoons butter, melted
1/4 cup milk
1 egg at room temperature
1/2 teaspoon vanilla extract
2 tablespoons unsweetened cocoa powder
1/3 cup self-rising flour (see our notes above to make it)
2 tablespoons sugar
2 tablespoons brown sugar
1/4 cup mini semi-sweet chocolate chips
Pinch of salt
Powdered sugar, for decoration
Sprinkles, for decoration
Baking Powder (to make the self-rising flour at home)
Procedure:
- In a small bowl, whisk together flour, cocoa powder, salt, and sugars.
- In another small bowl, whisk egg, milk, vanilla and melted butter until smooth.
- Combine the dry and wet ingredients and mix until well combined.
- Stir in chocolate chips.
- Divide batter evenly into 2 mugs and microwave each separately on high for about 1:30 minutes. If the cake is not set, microwave in intervals of 10 seconds until fully cooked.
- Once completely cool, dust some powdered sugar and sprinkles on top.
