Little Foodies: Gingerbread Crispy Treats

We all know crispy treats. It’s one of the first things that children can learn to make in the kitchen because it is very easy to prepare. With a little butter, marshmallows and rice cereal in the right amounts you get a crowd pleaser dessert. This time we made a different version, using chocolate rice cereal. We also added spices to the mix to give it that classic flavor of the Christmas season.
Usually they are prepared and cut into squares, this time we spread them on a baking tray to form gingerbread men shapes. What is left over can be put together and cut into squares. We recommend you add a little butter to your hands to be able to spread the mixture easily on the baking sheet. This must be done while the mixture is still a bit hot, so be careful.
You can use royal icing to decorate the cut-out shapes, but we left ours on the simple side adding only large silver sprinkles. Another option is to add dutch cocoa powder to the mix instead of spices to make it extra chocolatey.
At Almacenes Siman we found a neutral plate which is ideal to showcase any appetizer or dessert such as this, Christmas place mats, decorative items for the table, a set of red and white mugs, and we really loved the mini mason jar shakers which we used to keep and sprinkle our pumpkin spice.

Gingerbread Crispy Treats
Recipe adapted from Clean and Scentsible
Yields: about 12-14 gingerbread men
Ingredients:
¼ cup butter (½ stick) + more for greasing
6 cups marshmallows
1 teaspoon pumpkin spice
5 ½ cups chocolate puffed rice cereal
large silver sprinkles or other candy for buttons
Procedure:
- Prepare a cookie sheet by greasing the bottom and sides.
- Over low heat melt the butter. Add in the marshmallows and stir to melt. Combine with pumpkin spice and remove from heat.
- Stir in the rice cereal until well combined.
- Place the mixture on the prepared cookie sheet, spreading it out until it is about ½-inch thick. Using gingerbread man cookie cutter, cut out the shapes and place each one over a piece of waxed paper.
- Decorate with candy, or icing as desired.
