Little Foodies: Cucumber Sushi Rolls

Kids love to be involved in the kitchen if you let them. If you have them be part of the food prep, they will be much more interested in trying new and different foods – specially if you eat them. Kids love to try new things (as long as you do it first 😆).
Having Kristen eat so many vegetables (she absolutely loves roasted broccoli with lime juice), its important for us to have her eat a wide variety of vegetables and fruits. And a recipe like this works wonders. She got to try a different combination of vegetables and rice… and she loved it! Specially because she found a new recipe she can make on her own.
So after washing the cucumber perfectly, scoop the seeds away using both a melon baller and a long dessert spoon, then fill it with the cooked white rice and push it into the sides. That way you can slide in the vegetables easier. Some of the rice will end up over your prep area, but its inevitable. Embrace the mess.
At Almacenes Siman we got white serving dishes (the long one we loved to place the cucumbers), as well as the small soy sauce bowl, that had plenty of room to dip the cucumber sushi in.

Cucumber Sushi Rolls

Serves 2
Ingredients, for the sushi:
2 cucumbers
1 cup cooked rice white or brown
¼ firm avocado cut into thin slices
¼ red bell pepper matchstick, julienne cut
¼ carrot, julienne cut
Ingredients, for the spicy mayo:
1 tablespoon light mayonnaise
½ teaspoon sriracha
Ingredients, for the soy sauce:
2 tablespoons of soy sauce
a bit of lime juice
Procedure:
- Cook rice according to package’s instructions. When finished, do not stir rice and allow it to cool. This should make for a stickier rice to hold everything together.
- Cut each cucumber in half and remove seeds with either a small spoon, melon baller or apple corer to create a long, hollow tube.
- Spoon in a small amount of rice, then compress towards one side of the tube using a butter knife.
- Gently insert a slice of avocado and a few slices of pepper and carrot, then add more rice to fill gaps, compressing and adding more rice until packed full. Be gentle, especially if your avocado is ripe and soft!
- With a sharp knife, slice cucumber into 1 inch thick pieces. If you start to notice the filling is loose as you cut, stuff in some rice and peppers or carrots if needed.
- Serve with either low sodium soy sauce or spicy mayo. To make spicy mayo, mix 1 tablespoon mayo and ½ teaspoon sriracha.
