Happy Hour: Peach Gin & Tonic

This month’s Happy Hour recipe is a fresh take on the classic Gin and Tonic. We added peaches and a thyme spring to the mix, and the results are dangerously delicious. The success of this variation lies in the quality of the peaches you can find. We were lucky to get these very sweet and juicy ones, which infused their flavor into the drink. If you can’t find fresh thyme, you can try rosemary instead.
Some of you have asked us for the specific brand of liquor that we use in our recipes. For this one, we used Hendrick’s gin, and Evervess tonic with a splash of lime juice. We’d love to know if you have tried our recipes!

Peach Gin & Tonic
Recipe adapted from How Sweet Eats
Serves 2
Ingredients:
4 oz. gin (2 oz. for each glass)
1 peach, sliced in wedges
2 small bunches of fresh thyme
8 oz. tonic water (4 oz. for each glass)
1 lime
Procedure:
- Fill a glass with a few peach wedges and some ice.
- Pour the gin over the ice, followed by the tonic water and add a squeeze of lime juice.
- Stir a few times to combine. Serve immediately with fresh thyme springs.
