Summer Gazpacho

Gazpacho is a cold soup, historically it is said to be originated in Spain. There are many different recipes, some may have carrot, others include a bit of apple, but traditionally it is made from tomatoes, cucumber, bell pepper and garlic as the main ingredients.
It is ideal to cool off on hot summer days, served very cold. We love to accompany it with toasted bread.
It’s really easy to make, you just need to blend all the ingredients together, chill and serve. It is not necessary to strain it. The only observation we have, is that you might need to blend in batches, if all the ingredients don’t fit into your blender. You can also use a food processor, but we prefer a blender for this. The texture will be smoother.
We found some great items at Almacenes Siman, like this beautiful pot we wanted to show you. Even though this soup doesn’t have any stove top time, you can use it to serve the soup in. We also found a nice cutlery set and a ceramic item which we loved for kitchen decoration.

Summer Gazpacho
Recipe from Gimme Some Oven
Yields : 4 servings
Ingredients:
2 pounds fresh tomatoes
1 cucumber, peeled and cut into large chunks
1 small red bell pepper, cored and cut into large chunks
quarter of a red onion, peeled
1 garlic cloves, peeled
1 teaspoon paprika
¼ cup fresh basil leaves
2 tablespoons fresh lime juice
1 tablespoon olive oil
salt and pepper to taste
optional garnishes: extra chopped tomatoes, red onion, basil,
olive oil, and/or salt and pepper, croutons, pepper flakes
Preparation:
- Add all of the ingredients into a blender or large food processor, and puree until completely smooth. If necessary work in batches.
- Taste, and season with extra salt and pepper and/or lime juice if needed.
- Cover and refrigerate for a few hours to chill. Or serve immediately, topped with your desired garnishes.
