Sloppy Joes

Sloppy Joes are one of my emergency Monday Meal Prep recipes. It is quick to put together when you are busier than usual, and it’s an especially popular dish with the kids. You can prepare the meat and either serve it with a hamburger bun to make your Sloppy Joe, or serve it on top of cooked rice and a side of green veggies.
This recipe is on the healthier side, because it doesn’t have ketchup in it or brown sugar, which are usual ingredients , and you can substitute lean ground beef for ground turkey to make it even healthier. Whenever I make ground beef recipes, and it calls for tomato sauce, I prefer to use a basic tomato sauce and add the flavoring and salt according to my taste, I recommend you do the same.
I added some canned red beans to make it a little more filling and put some shredded lettuce on the buns to make sure we got our dose of leafy greens, and I think it gives it a nice texture and flavor.

Sloppy Joes
Recipe adapted from Slim Sanity
Serves: 6
Ingredients:
1.5 pound lean ground beef
1 tablespoon olive oil
8-oz. tomato paste
½ cup tomato sauce
½ teaspoon garlic powder
½ teaspoon salt
1 tablespoons chili powder
½ teaspoons onion salt
1 can cooked red beans
shredded iceberg lettuce, optional
Cole slaw, optional
Instructions:
- In a large sauce pan, brown ground beef over medium heat until completely cooked.
- Stir in all ingredients, except for the red beans. Once mixed, heat on low for an additional 5 minutes. Add the red beans last, and heat through.
- To assemble: If adding shredded lettuce, cover half of a burger bun with shredded lettuce and top it with the ground beef mixuture. Close the burger with the top bun, and enjoy!
