Little Foodies: Christmas Glass Cakes

This is an easy recipe for kids to build a dessert using ingredients from a finished cake: cake, frosting and decorative candy, plus chopped up cookies because… its Christmas! It’s called a glass cake, because you use regular short, round glasses to build the dessert layers in.

To make it practical, we used store-bought ingredients, so head to your favorite bakery for some pound cake and cookies, get a tub of cake frosting, candies and decorative sprinkles. You can use food coloring, divide the frosting into small bowls and add a few drops to get different colors for your layers.

To prepare the cake so your kids can cut out the circles, cut it in half horizontally. We were able to get 3 rounds from each layer, for a total of 6, which is enough for 3 glass cakes. So there is no waste, you can cut out the scraps into cubes and use those as well to keep building more desserts until all the cake is gone.

You will need a round biscuit cutter that is the right size so the cake rounds fit inside your glass. When building the layers, try to place the majority of the decorative candy or sprinkles along the sides of the cake round, rather than in the center. That way, they can be seen through the glass. If you are making these with smaller children, we recommend you use plastic transparent glasses, for safety’s sake. Place all the decorative ingredients into small bowls or containers, so the kids can choose from the available variety to build their cake layers.

Christmas Glass Cakes

Makes 3 glass cakes
A Foodies’ Kitchen original

Ingredients:
1 store-bought pound cake, cut horizontally
1 tub vanilla frosting
food coloring (optional)
decorative sprinkles
decorative candy, such as marshmallows, crushed candy canes, M&M’s
6-8 cookies, broken into pieces
short, round glasses
round biscuit cutters
disposable pastry bag, or freezer plastic bag (for the frosting)
Christmas cupcake toppers, for decoration (optional)

Procedure:

  1. Cut rounds out of cake layers.
  2. Start with a layer of cake, gently press it down the bottom of the glass.
  3. Using a disposable pastry bag, with a small opening cut out, make small dots with the frosting until an even layer is formed.
  4. Next, sprinkle on your chosen candy, making sure some of them are placed along the sides so they are visible.
  5. Layer the second cake round, another layer of frosting, and this time top with broken cookie pieces and decorative sprinkles.
  6. For a final decoration, a small swirl of frosting with a cupcake topper in the center.
