Chiltepe Hot Sauce

In Guatemala, like other Hispanic countries, we enjoy our meals with a little added spice. Don’t let the little size of these chilies fool you, they are hot! Chiltepe is one of the hottest chilies around, but with the right recipe, you can moderate its intensity and enjoy it with many dishes.
Here, we will share the recipe of Chiltepe Sauce we prepare at home. After you make it, keep it in an airtight plastic container. It will last in perfect conditions for a little over a week in the refrigerator. Whenever I make it, we put it on everything! Eggs, beans, sandwiches, soups, or whatever meal I prepare. The extra kick is addictive!
The delicious flavor and great kick is enough reason for us to add it to our meals, but I also read that it can help lower cholesterol levels and improve blood circulation, as well as help fight off colds because of its vitamin C content. Chiltepe Hot Sauce
A Foodies’ Kitchen original
Yields: about ¾ cup
Ingredients:
⅓ cup chiltepe chilies
1 small white onion
1 cup fresh cilantro
1 roma tomato
1 teaspoon salt, plus more to taste
1 lime, plus more to taste
Procedure:
- Remove the stem from all the chilies.
- Bring a small pot of water to a boil, enough to cover the chilies.
- Add the chilies to the boiling water, and let them cook for about 2-3 minutes.
- Meanwhile, finely chop the onion, tomato, and cilantro.
- When the 2-3 minutes are up, remove the chilies from the water with a slotted spoon, and transfer them to a bowl. Do not discard the water.
- Press the chilies with a fork, or the back of a spoon and mix in the chopped onion, cilantro and tomato. Add ¼ cup of the reserved water and season with the teaspoon of salt and the juice of one lime. Taste, and adjust seasoning to your liking.
- Mix well and refrigerate
