Foodies Freebie: September 2016 Wallpaper Collection

September is here, and it marks Guatemala’s Independence on the 15th. We always feature typical ingredients for our calendar this month, and this year, we were inspired by ingredients used in our local cooking. We chose some of the most popular ingredients for this photograph: red tomatoes, green tomatillo, cilantro, epazote and locoro as some of the herbs and vegetables used in our sauces and tamale recipes.
Epazote is sometimes used when cooking black beans, it has a characteristic flavor, similar to oregano, and it is also used for medicinal purposes. Loroco is a flavorful plant used in many recipes, one of which is featured this month in our Chicken with Loroco Cream Sauce recipe. A more contemporary recipe we love is this Loroco & Tomato Rustic Tart that we published a few years ago.
Next to raw black bean grains, you will see pepita seeds, guaque chili, and cinnamon sticks which are all used in some sauces, desserts and local confections. Masa, the flour like bundle, is used to make tortillas, tamales, tamalitos, and chuchitos, these are all wrapped in dried corn leaves, which you find the top of the photograph, next to our delicious artisan chocolate.
Artisan chocolate is used to make hot chocolate, as well as some sauces such as mole. As part of the decoration, we included colorful clay owls, which are a part of our wide array of local handicrafts. These are from Antigua, Guatemala.
